It was all very wholesome, organic, natural food,\u201d says the Galway-based chef and content creator. \u201cThey had a farm and my granny would make all her own breads and cakes \u2013 everything was made from scratch.\u201d<\/p>\n<p>She grew up watching both her granny and mum batch-cook and freeze leftovers at home in Tipperary. \u201cEven after my grandad had passed away, she would still make her own beef stew, portion it for her own dinners and freeze the stew. She would never make one loaf of brown bread, ever. Discard anything that has no label on it. It might be bolognese, and God knows how long it&#8217;s been in there.<\/p>\n<p>\u201cIf you can defrost the freezer at the same time. That\u2019s brilliant.\u201d<\/p>\n<p><h2><strong>Meal plan for the week<\/strong><\/h2>\n<\/p>\n<p>While in the summer months her family are more relaxed, in term time Robbie writes a meal plan on Sundays for Monday to Friday.<\/p>\n<p>\u201cIf you write five days of meals, breakfast, lunch and dinner, roughly of what you\u2019re going to have, and knowing what\u2019s in the freezer already, then you can plan on what to cook on what days. The meal plan dictates the shopping list for the week.<\/p>\n<p>\u201cIt\u2019s about habit forming. If you\u2019ve never made a meal plan before, sometimes it can be very daunting. But if you did it for four weeks, you can reuse the meal plans for the next month if you\u2019re happy with them. You\u2019ll most likely have 20 dinners that you know your family will eat and enjoy.<\/p>\n<p>\u201cAnd then you\u2019re in control of the spend too \u2013 because we\u2019re all watching our pennies with the cost-of-living crisis.\u201d<\/p>\n<p><h2><strong>Double or triple recipes<\/strong><\/h2>\n<\/p>\n<p>Robbie encourages home cooks to double or triple a recipe that your family likes, to put the leftovers in the freezer.<\/p>\n<p><iframe src=\"https:\/\/www.instagram.com\/p\/DLxyr9SMgcT\/embed\/captioned\" frameborder=\"0\" scrolling=\"no\" class=\"sc-wn0aau-1 fCqdVG\"><\/iframe><\/p>\n<p>\u201cThere\u2019s no point in making one lasagne \u2013 have a second lasagne dish and double it up, portion it and freeze the cooked portions,\u201d suggests Robbie.<\/p>\n<p>\u201cMake 24 muffins. If I make 12, they disappear. And hopefully, then you could actually see what you have in the freezer.\u201d<\/p>\n<p><h2><strong>Defrost in time<\/strong><\/h2>\n<\/p>\n<p>\u201cI like to defrost the night before, because a lot of the time it\u2019s for school snacks. So in the evening, around 6pm when you\u2019re making your dinner, set a reminder on your phone from Monday to Thursday, especially in the school term, to go to the freezer and defrost what you need.\u201d<\/p>\n<p>Meat should be defrosted in the fridge, she notes, but low-risk foods like a baked good can be left on the worktop to defrost overnight. \u201cIt\u2019ll be safe,\u201d she says. \u201cThen you\u2019re not rushing to pull something out of the freezer on a busy school or work morning, that\u2019s when it gets chaotic.<\/p>\n<p><h2><strong>Feel good about it<\/strong><\/h2>\n<\/p>\n<p>\u201cIt\u2019s that feeling of being in control, a little bit of power that you have, because we\u2019re all trying to feed our kids better food, less processed and more homemade.<\/p>\n<p>\u201cIt\u2019s really hard to do all homemade all the time, but knowing that [your child] has got some homemade snacks in his lunchbox during the week, knowing that we\u2019re going to have at least two homemade dinners in the week, that\u2019s a great feeling.<\/p>\n<p>\u201cI think that\u2019s a really powerful feeling for a parent \u2013 you might not be able to do more than that, but even having that is better than none at all.\u201d<\/p>\n<p><em>\u2018Make &amp; Freeze\u2019 by Lou Robbie (Penguin Michael Joseph, \u00a322).<\/em><\/p>\n<\/div>\n<p><script async src=\"\/\/www.instagram.com\/embed.js\"><\/script><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Your support helps us to tell the story From reproductive rights to climate change to Big Tech, The Independent is on the ground when the story is developing.
